The 85Green: Cooking Series is a new collaboration with Collective Catering at The Underground Flavour Group. With monthly recipes designed for both individuals and families, we hope to build up food literacy in the community while exploring the intersection of food and culture.
This month, Chef Jaret is our featured chef. Get to know him before you attend one of his programs!
Born in Canada with an Irish descent, Jaret would grow up to be passionate about food, music, art and photography. Chef Jaret began his journey of becoming a culinary mastermind as soon as he was old enough to hold a mixing spoon. Always being in the kitchen as a child, Jaret eventually graduated from the culinary program at George Brown College in 2004. After graduating, Chef Jaret would then move on to start his apprenticeship at Charcoal Steakhouse in Kitchener. With odd jobs in between, he started his management career at The Bauer Kitchen then went on to become the head chef in establishments such as Borealis, Del Dente, Charcoal Steakhouse, Smoke N Soul Group, Wooly Pub and Imperial Market & Eatery. He is currently the Executive Chef/Owner of The Great Canadian Sauce Company.
What is your favourite food related memory?
Loving a red wine & black pepper sorbet at The Hilton in Edmonton when I was 5 years old.
What’s your favourite cuisine or type of food to make?
Classic French and southern cuisine.
Why did you select this particular recipe for the cooking demonstration this month?
I wanted to do something distinctlively French but local. I selected a Persillade basted Pickerel filet with beetroot variations, marinated mushrooms & leeks en vinaigrette.
